Best tips on how to make tomatoes stew
This is a very popular addition to food in Nigeria. We will find out how to prepare stew with tomatoes. The recipe is very fast and easy. Tomatoes stew forms the base for the Nigerian beef and chicken stew. Remember that it won’t have some seasoning or other ingredients because it is just a base. It can be added to the preparation of such dishes as Nigerian Jollof or Coconut Rice and spaghetti.
You will need these ingredients for cooking:
1. 3.2 kilograms of fresh plum tomatoes. In Nigeria, they are called Jos tomatoes.
2. 400 gram of tinned tomato paste. But you can also use 800 gram of watery tinned tomato puree.
3. A big quantity of vegetable oil.
4. Two onions.
Plum tomatoes are very good for Nigerian stew. All the other kinds of tomatoes have a strong taste and a lot of seeds. You will need a lot of oil for cooking tomatoes. This is so that they do not burn. Your tomatoes stew will have a sour taste if you do not use enough oil.
As for the tomato puree, it is very concentrated and thick. But it is not necessary to use it. A tomato puree is used to give the stew more red color and make it look tastier. Nigerian people use tatashe pepper to give that redness to the stew.
Before you start preparing, wash and blend the fresh tomatoes. Remove seeds if it is necessary. If you use a thick canned tomato paste, mix it with cold water to get a softer consistency. Then cut the onions into small pieces.
Procedure of preparing
First, pour the tomato mixture into a saucepan and cook it at high temperature. All the water must dry. If you have a watery canned tomato puree add it to the saucepan. Reduce heat to a minimum. And again don’t forget the water must dry as much as possible.
Add the vegetable oil, onions, and thick tomato puree. Then stir this mixture properly. Fry at a very low temperature and stir very often. The oil must separate from the puree. You should taste the fried puree to feel whether that raw tomato taste is gone.
Your yummy dish is ready! You can serve it with the Nigerian Rice or Jollof Rice, chicken, spaghetti – choose whichever one you prefer. It shouldn’t take you more than an hour to prepare this dish. Isn’t it great? Now you know how to make stew!
