Curry Chicken sauce recipe
This traditional Nigerian sauce recipe serves 2-3 people and it takes about 40 minutes to prepare. If it is your first time cooking a chicken sauce, this recipe is perfect for you! How to prepare chicken sauce for white rice
Ingredients:
⚬ 500 g of chicken (about 2 boneless thighs)
⚬ 1,5-2 tablespoons of curry powder (to taste)
⚬ 400 g of coconut milk
⚬ 2 medium carrots
⚬ 1 large onion
⚬ 2 bell peppers
⚬ 2-3 chicken seasoning cubes
⚬ 4 garlic cloves
⚬ 1 teaspoon of ginger
⚬ 2 tablespoons of cornstarch
⚬ 2 tablespoons of vegetable oil
⚬ salt, black and cayenne pepper (to taste)
Instructions:
➀ Cut up your chicken into rough cubes, season it with curry, one seasoning cube, salt and peppers to taste. Set it aside.

➁ Prepare your vegetables. Dice your carrots and bell peppers, slice the onions and mince the garlic and ginger.
➂ In a medium-sized mixing bowl, mix cornstarch and coconut milk until well combined.
➃ In a large pan use medium heat to warm up the vegetable oil, then add garlic and onion. Stir for about 4 minutes. Be careful not to burn them. Then add your chicken and fry it until golden brown.
➄ Add your mixture of coconut milk and cornstarch to the pan. Leave it to simmer until thick. Then add your chopped vegetables and minced ginger.
➅ If you see that the sauce is becoming too thick, you can add a little water until it is of the right consistency. Give it a little taste and add the remaining chicken seasoning cubes and other spices, if needed. Cook it until your chicken becomes nice and tender, and the vegetables are thoroughly cooked.

Useful tips:
To achieve better flavor, leave your chicken to marinade overnight. So it will absorb all the spices and taste even better.
