7 steps to cooking tasty fried rice with vegetables

There are tons of different fried rice recipes out there. Each of them is special in its own way, but most of them usually feature meat or seafood. But what should you do if you are vegetarian? For this recipe, you will need:

  • 2 cups (around 350 grams) of white rice (cooked);
  • 2 tbsp. of vegetable oil;
  • 1 small onion;
  • 1 medium-sized carrot;
  • a handful of frozen peas;
  • 2 scallions;
  • 2 minced cloves of garlic;
  • 1 tsp. of soy sauce;
  • 1 tsp. of sesame oil;
  • 1 egg (optional);
  • your favourite spices to taste.

Notes:

  • This kind of fried rice is suitable for almost anyone, especially vegetarians. If you are vegan, you can simply not use the egg while making this rice. You will not be missing out on much 🙂
  • This recipe requires the use of a wok. If you do not have a wok, you will need to find a very deep pan, as you will be tossing and shaking the whole thing during cooking. It will help you avoid making a mess in your kitchen.

  • Cut up your vegetables. Chop the onion into fine pieces and cut the peeled carrot into small cubes.
  • Divide your rice in two parts. Heat up half a tablespoon of your oil in a pan and fry one half of the rice in it. When it is nice and golden-brown, put it into a bowl and repeat the process for the other half of the rice.
  • When all of your rice is cooked through, put all of it back in your wok/pan and flatten it against the sides. Leave some space in the middle and pour another half a tablespoon of oil.

  • Put in your vegetables (except for the peas) and cook them until they are soft and aromatic.
  • Mix the veggies and rice together and toss them around so that they are well combined. Add the sesame oil, soy sauce and your spices and toss it all some more.
  • If you are not using the egg, skip this step. If you are, push all of the rice and vegetables to the side and pour what is left of your oil onto the empty surface of the pan/wok. Break open the egg and pour it into the oil. You can season it too, if you want. Scramble the egg with your spatula to break it into tiny bits. Mix it with the rice.

  • Add the peas to the mix and toss it all until they have thawed. You will know the rice is done when each grain is separated from one another. Take it off the stove and serve right away.

Tips on how to make fried rice better

  1. Find the rice that works for you. Experiment with different types of rice, see which one works best. Our trial and error has shown that the best types of rice for frying are jasmine, white medium grain and sushi rice. But you do not have to take our word for it, try them yourself!
  2. Prepare the rice properly. Rinse it several times before cooking to remove the starchiness. As to when to cook it, there is no right or wrong answer to that. You can do it a day before or just before frying. Just make sure it is dry and not lumpy.
  3. Keep your wok/pan very hot. The hotter it is, the better your rice will come out. It will also help to cook it in small portions first so that all of the rice is thoroughly cooked.
  4. The previous tip, of course, means that you need to constantly toss the rice around so that it does not burn. In addition, it will also help to separate the individual grains and add to the cooking experience.
  5. Go easy with the ingredients. Use vegetables and spices that complement the rice and not overwhelm it. Do not use too much of the sauce either. It is better to just add a little salt later than end up with completely inedible rice.
