Nigerian fried rice with chicken is a perfect dish for any occasion. You can cook it every day, or save this recipe for a special occasion. Without further ado, let’s get to cooking!
Ingredients needed for Nigerian fried rice and chicken
For this recipe, you will need:
- 750 grams of parboiled long grain rice
- your favourite chicken parts (we recommend using drumsticks or legs)
- 1 tbsp. of curry powder
- 1 tbsp. of thyme
- 2 tbsp. of green beans
- 100 grams of cow liver
- 5 medium-sized carrots
- 3 medium-sized onions
- 3 Maggi or Knorr flavour cubes
- salt, pepper and other seasonings to taste
- vegetable oil for frying
Note:
We are using parboiled rice in this recipe. This means that it is pre-cooked. Just make sure it is half boiled and not too soft,
How to cook Nigerian fried rice and chicken

Step 1. Cut up all of your vegetables into small cubes. Soak the beans and carrots in hot water for five minutes. Use separate bowls for that. After the time is up, drain the water. Set the carrots and beans, as well as one onion, aside.
Step 2. Boil some water. Put your chicken parts in the boiling water. Add the cow liver, thyme, the flavour cubes and two onions. Cook it all until the meat and liver are done.
Step 3. Take the liver out of the stock, cut it into cubes and set it aside with the cut up vegetables. Take the chicken out, season it to your liking and leave it for a bit to soak in the spices.
Step 4. Pour the leftover stock through a sieve to remove all the solid bits, place it in a pot and set it on the stove to boil.
Step 5. When the stock is boiling, put the parboiled rice in. The rice should be barely covered by the stock, so you should carefully drain the excess water, if there is any. Add the curry powder, salt, pepper and other seasonings. Stir the rice, cover your pot and leave it to cook on medium flames/heat.
Step 6. Regularly check on your rice. As soon as you see that the water is all gone, take the pot with rice off the stove. Transfer its contents to a large dish, so that the rice can cool off properly. By now, it should be perfectly cooked, and the grains should not stick to one another.
Step 7. While the rice is cooling, it is time to fry your chicken. You can either fry it in a large pan until golden brown, or deep fry it in oil in a large deep pan.
Step 8. You will not be able to fry the rice all at once, so divide your vegetables, rice and liver into several batches. The amount of the batches depends on the size of your frying pan.
Step 9. Pour your vegetable oil in the frying pan. It is better to add more oil later, if necessary, than to end up with greasy rice. When the oil gets hot enough, put in the onions. Stir them for 10 seconds, then add the liver and the rest of the vegetables. Stir for a few moments and add the rice.
Step 10. Continue stirring the rice mix until it is properly fried. Add more curry and salt if needed. Transfer the first batch of the fried rice to a plate or a dry pot and repeat the previous step for the rest of the batches.
And your rice is done! Finish it off with your fried chicken, and you are good to go. Bon appetit!
Recommendations
- You can serve Nigerian fried rice and chicken with coleslaw, moin moin or Nigerian salad. However, it is a fully sufficient meal on its own.
- To make the cooking process faster and more fun, try frying the rice in a wok, if you have one. If you do not own a wok, any regular frying pan will do.
- The curry used in this recipe is only there for colour, not spice. You can easily replace it with turmeric.
- It is best to eat the fried rice as soon as it is ready, as it can go bad pretty quickly. Nevertheless, if you absolutely have to save some for later, you can leave it in the fridge for up to 48 hours.
